During the winter months, Raw Honey has a smooth, almost butter-like spreadable consistency. This is due to the nature of the nectars fround in the fall flowers of this area, mostly goldenrod, aster, and knotweed; and their crystallization pattern. The taste is a little stronger than spring honey, but is very pleasant.
During summer months, our spring honey comes from Honeysuckle, Basswood, Locust, and Buckthorn, and is often light in color and taste, and will stay liquid for many months before crystallizing.
So you will see that from season to season honey varies in color, texture, and taste, as is the nature of seasonal flowers and the honey produced from them in its raw, natural state.
